The only real differences would be the finish of the metal and the stocks. The 700 XHR has a triangular barrel while the other 2 have round barrels.

from what i see the xhr would be remingtons version of a mtn rifle.its barrel shape is triangular(fluted) designed to shave weight off the rifle.the sps just comes with an engraved floorplate and realtree hardwoods stock,the bone collector comes with there logo and a black nitrite finish over the stainless steel.all three come with the same adjustable trigger,im not the most knowledable on the 700's im sure karl or some other members can comment on the new triggers and such.

Just a quick note on the M700s you list

I tried to note the differences, they all have the new x-mark pro trigger. The xhr is the heaviest by 1/4 lb. You may want to consider that these have a 24 inch barrel. While this gets max performance out the standard cartridges it will also not be as handy in the woods as the more standard length 22 inch. Those two inches are noticeable. If they do bug you, just have a gunsmith cut off 2 inches and recrown the barrel. Whichever of the three you pick will be a nice addition.
