My brother used to have a party every year on the first weekend after squirrel season opened and everyone had to bring a squirrel dish. He even had shirts made that said "I got nuts at the squirrel roast" .
One thing I like (because it's easy) is to bone out several squirrels, brown the meat and then just put it in a crock pot with barbecue sauce (I like Sweet Baby Ray's). Then just serve it like pulled pork barbecues.
I have not eaten squirrel in many years, but my mom always used to take the ones my brother and I shot and replaced the chicken in chicken and dumplings with squirrel meat, either that or she would just fry up quartered squirrel
