Ok, nothing exact about this or any of my recipes....
Ingredients
1 Venison Roast (bone in or boneless: bone in will have more flavor)
1 Can chicken broth \
} combine and bring to a boil
1 Can beef broth /
1 onion, wedge into 1/8 pieces
1 carrot, peeled and chunked into 4 pieces
1 stalk celery, washed and chunked into 4 pieces
Dried Thyme, to taste
any salt free steak seasoning
Salt, to taste
black pepper, to taste(careful as some steak seasoning also have pepper in them)
Rub the roast with salt, steak season, pepper, and thyme. Sear all sides in a hot pan with olive oil. Remove meat and transfer to a crock pot or roasting pan that can be covered. Add broths and vegetables. Cook covered in an oven at 275 or in a crock pot until meat falls off the bone. Remove from cooking vessel and shred or pull. Add favorite commercial or home made bbq sauce. Enjoy with soft buns or by itself.
For an alternative, rub with the seasonings or your favorite rub recipe and smoke in a smoker with hickory, apple, walnut, or cherry woods.
