holiday dinners

just wondering if anyone made a holiday dinner out of wild game? we just had turkey... but I think we might try venison for new years dinner. I just wrote a blog about it, but I might try to find more recipes to add. let me know if you had any luck with a specific recipe that was a hit with your guests

No holiday dinner but we did have a Roasted Wild Turkey for CHRISTmas dinner. I thawed the bird for a day or so (forgot to take it out one day earlier so it wasn't completely thawed).

24 hour Brine: Dissolved 1 cup of sugar and 1 cup of kosher salt in 1 gallon of water. Placed the Wild Turkey in a brine bag and added the slat/sugar solution. Added 1 gallon of cold water to the brine bag. Zip tied the bag and placed into the refrigerator for about 18 hours.

Drained and rinsed the wild turkey. Stuffed the cavity with stuffing (prepared according to the box). Injected the turkey with about 1/2 cup of melted butter. Most into the breast and thighs. Placed the wild turkey into an oven roasting bag along with a bag of potatoes and about4 cups of water. Baked for 3 hours at 350ºF.

Everyone loved it - the dog included: ) (He only got what was given to him, no theivery like in some other posts)

Heck yeah man... my father-in-law has one of those oil free turkey fryers and we LOVE IT. They inject probably a cup of butter into a 16 lb turkey and it tastes AWESOME. Their is the oil-free fryer made by butterball. Cost around $100. Very nice addition to the holliday dinners
You don't have to wait untill next thanksgoing to roast/fry a turkey!
I used to cook turkey all the time, but since I am not much of a good cook, my husband was always displeased, and now we stick to a simple solution and order prepared food home - there is more space for experiment - turkey, beef, seafood.
