I have been taking my time processing last weeks harvest since (he aint going anywhere), still have some cutting to do yet and already the freezer is starting to look really nice. my goal this season though it my be high or unrealistic is 6 deer. I would like to have ample venison to try my hand at some jerky and sausage. if the temps get down like they are supposed to and stay it will free me up to take doubles the same day.

full freezer is a good plan! I would like to get two for the freezer this year. :yes: I have to clean out the freezer, darn it. :thumbdown:

I have set that goal for a few reasons. 1. it will provide enough venison to maintain a good supply of premium steak for the whole year. 2. i will have enough to make jerky and sausage, something I have been wanting to do but never had the surplus meat. and 3. I like to be able to share the bounty with out any concern for the condition of the storehouse.. I have rationed available venison over the past 3 years quite well as I still have a few packages dated "08".

I am trying the same thing I would like at least 3 between 4 of us that hunt together anyone that helps w/ the kill dragging, processing the deer gets split up between them & my kids would eat Veni 3 meals a day if I would let them never did Jerky but we do sausage, burger, roasts & steaks heading to NY on Oct. 28 for a week so hopefully this year we can bag a few out there & over stuff the freezer
