In MO it's not legal, but that doesn't mean that SOMETIMES I wouldn't mind being able to do it. But I don't. I don't think you are going to change when the deer eat, personally. If I were you, decide when you are going to hunt, morning or evening. If you are morning hunting, go the early evening before and put out some bait in a location that is close enough to shoot. Maybe even in 3-4 places if you can. Then in the morning, I would watch those places really carefully-- I would also make sure you are scent free and quiet heading to the stand location, b/c they might already be eating when you get there.
If you are hunting in the evening, I would put out some bait in the later morning on the day of your hunt. Do the same thing as above when heading to your stand.
Deer love corn! especially this time of year. They are beginning to eat corn, beans, other grains... they are slowly getting tired of eating greens all the time. I would mix up some dried apples and corn and set that out. That's what I use in pre-hunting season to get pics on my trail camera. I bait only for pics.
