I have some spoonbill meat still in my freezer from earlier this summer, and was wondering if anyone had any ideas on how to cook it?

You might try marinating it over night in Italian dressing and then cooking it slowly on the grill. It takes out some of the gamey taste.

Try Half cajun cornmeal mix with jiffy mix. after soaking meat in salt water for 15 min. and coat 1 inch chunks in mix and fry till golden brown. If you fry it too long it get a bit tough.
