HM's Christmas Eve tradition: Preparing as I write this.
Parboil rats in sweet onion, salt, pepper about 30 minutes.
Switch to electric fry pan, add 1 8oz can beef stock
Place rats in and pile on the sweet onions and apples.
I like to add sliced carrots and celery stalks on top.
Slow cook covered for 2-3 hours till meat falls of the bone.
Muscrat is very sweet tasting. Additional salt/pepper as desired.
