veni mini meatball soup
I'm making this today here's what ya need - 5 red potato's
- 3 stalks celery
- 1lb carrots
- 2 yellow onions
- 1 bunch parsley
- dice an add to pot
- cover with water add 5 beef bullion cubes
- cover and boil
- FOR MEATBALLS
- 2lbs veni ground
- 3 eggs beaten
- 3/4 cup breadcrumbs
- assorted spices,garlic,oregano,basil, salt, pepper, paprika, cumin, etc to taste
- roll into small meatballs
- fry up in pan with olive oil till they are well done and brown
- add to the soup pot
- simmer till veggies are tender
this is a hearty soup for those who like a thicker soup you can add 2 tbls of corn starch to some cold water and add to the pot this will thicken up the broth if you like a tomato based soup you add some tomato paste from a can or they sell it in a squeeze tube now that looks like toothpaste.I make a huge pot then divide it up and freeze it so i can have it whenever i need to warm up.Sprinkle some grated Parmesan cheese or crouton's if you like and enjoy after a cold day hunting
