backstraps with mushrooms
1 backstrap,3/4lb mushrooms,3tbsp butter,2tsp flour salt n pepper,1cup heavy cream,6slices french/italian bread,6tbsp butter,1/2 cup scotch or bourbon.slice mushrooms and saute in 3tbspbutter.add flour and saltn pepper blend well stir in creamkeep well heated.in seperate skilletsaute the backstrap thats been cut into 3/4" meddalions in in butter2mins each side for rare.saute the breadin 6tbsp butter keep turning so butter isnt absorbed.arrange the bread in a ring top with meddalions and mushrooms.stir scotch into pan juices boil 1 min spoon over the meat. pour yourself a glass of bourbon enjoy.
