12 lbs of summer susage Started smoking 12 lbs of a mix of deer meat and ground pork butts for summer sausage for the holidays. I'm using apple wood for the cold smoke. Started this morning at 6:30am and hopefully will be done by noon or so. This is my first attempt at this so we'll see. :rolleyes: :yucky::yes:??? |

haven't tried making summer sausage yet but I love using my Smoker stinks it takes so long but we hardly use the propane BBQ grill anymore on the weekends will be smoking a Veni roast this weekend |
I haven't tried summer sasuage myself either. I've always been alittle scared to I guess, but I've been making jerky for about 17 years now and feel I got it down pretty well ever since I got a few people that drive over two hours to bring me their deer and turkey meat lol |

for the first attempt not bad. The apple wood did a nice job. I would cut the curing salt slightly on the next batch but something different and not too much trouble to do. I got the kit from Bass pro shops. |

I have a lot to learn but something to do while I'm off work. Bad thing is I left the garage door open and the wind took the apple wood smoke in and now everything smells... well you know. :ranting: |
Sounds tasty. We're gonna try making some polish sausage Monday and smoking it. Great now I'm hungry. |
