No holiday dinner but we did have a Roasted Wild Turkey for CHRISTmas dinner. I thawed the bird for a day or so (forgot to take it out one day earlier so it wasn't completely thawed).

24 hour Brine: Dissolved 1 cup of sugar and 1 cup of kosher salt in 1 gallon of water. Placed the Wild Turkey in a brine bag and added the slat/sugar solution. Added 1 gallon of cold water to the brine bag. Zip tied the bag and placed into the refrigerator for about 18 hours.

Drained and rinsed the wild turkey. Stuffed the cavity with stuffing (prepared according to the box). Injected the turkey with about 1/2 cup of melted butter. Most into the breast and thighs. Placed the wild turkey into an oven roasting bag along with a bag of potatoes and about4 cups of water. Baked for 3 hours at 350F.

Everyone loved it - the dog included: ) (He only got what was given to him, no theivery like in some other posts)
