One of the things I do here in Illinois is after you field dress your deer put all the insides out for the coyote. Make sure you put it in a place that's easily accessible for you. It might take a day or two for them to take to the bait depending on how much human scent you get on it. Finally, you could also grab some road kill and use that for bait.
